Recipe: School Lunch Peanut Butter Fingers

School Lunch Peanut Butter Fingers
I think I’m the only person in the world who gets sentimental about school lunches.

My husband laughs at me whenever I crave chili and donuts (a Friday school lunch special) or reminisce about the shredded cheese that you could roll into a ball and bounce on the cafeteria tables (am I the only one who did that?).

So, I’m a little nervous to admit that these AMAZING peanut butter fingers come from my elementary school. Literally. My mother got the recipe from a lunch lady when we were little because they are AMAZING. Have I mentioned that these cookies are amazing?

It’s a sheet cookie with a chewy peanut butter oatmeal cookie crust smothered in melted chocolate and THEN topped with peanut butter frosting. AMAZING.

You might notice there are no quantities for the powdered sugar and milk in the frosting recipe. That’s because I just add some powdered sugar and mix…then add a little milk (a few tablespoons at a time) until it is a good constancy. If it gets too runny, just add a little more powdered sugar.

Also, it’s illustrated all cute so your little ones can follow along while they help you (read: while they drop eggs on the floor and get everything covered in flour).

If you make them, let me know how they were (amazing, right?).
